Ana Vilas Boas is fellow research at Escola Superior de Biotecnologia da Universidade Católica since 2017. Her academic education includes BSc in Biotechnology (2016) with a ERASMUS+ program in Mendel University in Brno and an MSc in Food Engineering (2020). Her scientific career started as a BSc fellow research in National project (ESSENCE), where she works in the development of a coffee with a high level of antioxidant compounds. Currently, she works as a BSc fellow research in National project (Nature Bioactive Food) and European project (FODIAC), intending to develop new functional ingredients through the valorisation of non-conforming fruit and a dietary solution to tackle type 2 diabetes and cognitive dysfunction of the elderly, respectively. The projects participation allowed her to acquire and improve scientific and practical skills related with microbiology analysis, chemical and nutritional characterization of food matrixes and by-products (e.g. HPLC and LC-ESI-QqTOF-HRMS), bioactivity analyses of bioactive molecules (antioxidant, antimicrobial, prebiotic, antidiabetic activity) and in development of new functional products while tackling the important topics of food waste and circular economy. In the past years, she authored 4 publications in international journals, 2 book chapters, 1 oral conference communication, 3 conference abstracts and 6 conference posters. Ana Vilas Boas also improve her entrepreneurship skills due to the participation in several entrepreneurship programs, winning 6 awards mainly in the field of food innovation and new industrial process for waste valorization. Her research interests are related to Food Biotechnology, Food Engineering and Technology, Industrial Biotechnology (sustainable food processing industries) and Food Valorization with emphasis on nutrition and health field.
