Isabel Saraiva de Carvalho graduated in Biochemistry in 1990 from the Faculty of Sciences of the University of Lisbon. She obtained a Master's degree in Food Science and Technology in 1993 and a PhD in Agronomic Engineering (Plant Biochemistry) in 1999, also from the University of Lisbon. In 2022, she got her Habilitation in Biological Sciences with a specialization in Biochemistry and Biotechnology from the University of Algarve. She joined the University of the Algarve in 1999, in the Agricultural Sciences and Biotechnologies Unit. She is currently an Associate Professor with Aggregation at the University and is a member of the CHANGE Associated Laboratory and the MED research centre. She is also responsible for the UAlg Food Science Laboratory. Throughout her academic career, she has supervised 3 postdoctoral researchers, 8 PhD candidates, 22 master's students, and over 30 undergraduate projects. Her scientific output includes 67 publications in specialized journals and 12 book chapters. In her teaching, she is responsible for several courses in the fields of Biochemistry and Biotechnology. Her research focuses on Natural Sciences and Biological Sciences, particularly Food Biochemistry and Food Biotechnology. The primary aim of her work is to study Mediterranean plants and algae that can be incorporated into human diets, with an emphasis on isolating and identifying natural compounds with bioactive properties. Under her leadership, her research group was among the first globally to study the purslane plant (Portulaca oleracea L.) as a rich source of antioxidants and omega-3 fatty acids. Their work has significantly advanced the understanding of the metabolic pathways involved in producing these fatty acids. Currently, her research centers on identifying bioactive compounds in medicinal plants traditionally used by local populations, with particular interest in their antioxidant, antibacterial, and anticancer properties. These compounds have potential applications in health, particularly in the management of type 2 diabetes. We have performed chemical proximate analysis and determined the carbohydrate profile of mature seeds of Lupinus albus, cv. Rio Maior and Lupinus mutabilis, cv. Potosi plants, either well watered (ww) or subjected to a water-stress period (imposed from the 15th to 35th day after anthesis).
