Carlos A. Pinto is a 30-year-old PhD graduate in Biotechnology from the University of Aveiro (UA), and defended his PhD thesis on 15th July 2024. Carlos began his academic journey at UA, completing a bachelor’s degree in biotechnology in 2015 and a master’s degree in biotechnology with a specialization in Food Biotechnology in 2017. Since 2015, Carlos has been working with high pressure processing (HPP) for nonthermal food pasteurization and hyperbaric storage (HS) for food preservation. A few months before starting the bachelor Project (in 2015) he volunteered to work at Professors’ Jorge Saraiva laboratory, where he first contacted with young researchers and PhD students in the field of food technology, and where we quickly developed his passion for the high pressure technology. In 2017, after completion of the master thesis, Carlos was a research fellow for 1 year in the project Algavalue, aiming the use of high pressure for nonthermal extraction of bioactive compounds from Aurantiochytrium sp., were he developed skills in chemistry (aside from food-related analyses) and extensive training on the operation and maintenance of high pressure processing equipment (laboratorial, pilot and industrial scales). Upon completion of the PhD fellowship (in April 2023), Carlos enrolled in a fellowship in the project VIIAFood, aiming to develop prototypes of new food products, where he remains till this day. So far, Carlos has published more than 50 scientific articles (research and review), and 16 book chapters, in the field of emergent processing technologies, with special focus on HPP and its applications in different fields (Food Science, Biotechnology, etc.). Carlos has more than 1059 citations (Scopus) and an h-index of 18. During the PhD, Carlos was elected as student representative at the Nonthermal Processing Division from the Institute of Food Technologists (NPD-IFT) from the United States of America (Chicago, USA), participating in events’ organization, monthly online meetings and in-person events (July 2019 in New Orleans (USA), November 2022 in Dublin (Ireland) and October 2023 in Minneapolis (USA)). This allowed to build an extensive network of collaboration with other fellow PhD students from all around the world (and their respective supervisors), and industrial stakeholders sharing experiences and scientific knowledge. Carlos is highly experienced in microbiological analyses (general microorganisms, pathogens handling and manipulation, bacterial and fungi spores’ production, antimicrobial analyses, etc.), determination of physicochemical parameters in foods (antioxidants, phenolic compounds, enzymatic activities, etc.). At the same time, Carlos had the opportunity to learn about mathematical modelling using Matlab, to describe microbial inactivation kinetics, as per nonthermal processing, most of the inactivation kinetics are non-linear, requiring the application of specific mathematical models (for example the Weibull, Log-logistic, Biphasic models, etc), which are useful, for example, in the field of predictive microbiology. Carlos also had the opportunity to explore the field of response surface methodology coupled with experimental design (Box-Behnken, central composite, etc.) to optimize extraction processes based on specific responses, using the software Statistica. With a problem-solving mindset, Carlos developed advanced skills on high pressure maintenance, ensuring that his work and the work from his lab peers would continue despite some technical issues that from time to time may arise.
