As a PhD (Ph.D.) with 4 years of Post-Doc, Pedro has academic and industrial scientific experience. At a scientific level, Pedro has 25 publications (20 scientific articles, 4 book chapters and 1 bulletin), of which 14 were published in the last 5 years in high impact journals (Q1) in the areas of Carbohydrate and Food Chemistry. Most are original research works with a high number of citations (h-index 17 and 721 citations - Scopus). The portfolio also includes panel communications (24) and oral communications (16) presented in national and international meetings. Throughout his scientific career, Pedro has also tutored 1 BSc, 2 MSc, and 6 PhD and have also supervised 10 BSc and 2 MSc. In the course of his scientific research on carbohydrate research as team member in the projects Aquafaba/QOPNA/2.20.400.62 and “cLabel+” project (POCI-01-0247-FEDER-046080), Pedro developed several food prototypes of agro-industrial relevance: 1) aquafaba as a substitute for egg protein in the formation of food foams and currently marketed by AlternativeFoods (UK); 2) cider using apple pomace as raw material, finalist product of the Ecotrophelia Portugal contest in 2017 and currently sold by Vadia microbrewery (Portugal); 3) 2 vegan mayonnaise using aquafaba or surplus yeast protein from the brewing process (Mendes Gonçalves); 4) 2 syrups rich in fructooligosaccharides and inulin as an alternative sweetener to sucrose (Frulact). His current research on sugar alternatives have allowed Pedro to participate in several innovation and entrepreneurship initiatives awarded by Ecotrophelia Portugal, Ecotrophelia Europa and by the Amélia de Mello Foundation.
