Measurement of the prebiotic activity of oligosaccharides, including the study of the dynamics of bacterial populations by FISH iv. Assessment of nutritional and technological aspects related to the development of functional foods v. Assessment of antioxidant and antimicrobial properties in natural matrices, including food and food by-products vi. Bioaccessibility studies in vitro of antioxidants compounds present in dietary fiber-rich extracts
