Sara is the Staff Researcher of the 3D Food Printing and Cellular Agriculture research line and FC Deputy Coordinator at the INL and holds a Ph.D. in Bioengineering Systems (2014, MITPortugal Program) in Biomaterials and Tissue Engineering. She developed and modified instructive surfaces and 3D scaffolds, enhancing cell behavior and differentiation. Since 2016 she has applied additive manufacturing, creating novel and functional foods at the INL, including alternative proteins, e.g., cultivated meat with muscle and plant-based bioinks (PI of M3aTD project founded by the Good Food Institute 2020/2022); insect protein (internal PI of the InsectERA PRR 2023/2025) and fungi (current collaboration). Her most significant contributions are 1PCT submission, 11posters, 17(12 invited) oral presentations, being a member of the Advisory Board of a cultivated meat/fish startup, being an executive member of CellAgri Portugal, being an organizer of the 1st International CellAgri Portugal Conference, 23 publications (h-index 16, IF), reviewer of CellAgri projects, associated Editor of Frontiers Sustainable Food Processing, a book editor in Springer Nature, co-/supervision/support of 11 students (trainee, internship, MSc and Ph.D.), preparation of several national/European projects (HE, PRR, ERC Starting Grant), and enrolled in 2 EIT Food innovation programs (TEAM UP-2021 – cultivated meat and 3D printing, EWA-2021 – personalized snacks).
