My name is Ana Rita Pereira, and I have a PhD in Sustainable Chemistry from the Faculty of Sciences of the University of Porto. I am currently a researcher under the VIIAFOOD-PRR-Agenda Mobilizadora-C644929456-00000040 project. My doctoral research focused on extracting and characterizing lignin from agro-industrial byproducts through various analytical techniques, aiming to use this biopolymer as a color stabilizer and oxidative protector for phenolic chemicals in diverse matrices.. Additionally, my PhD expertise includes extensive studies on the chemistry of anthocyanins, particularly their degradation and stabilization under various glycosylation and acylation conditions. In 2016, I completed my Bachelor's degree in Chemistry at the Faculty of Sciences of the University of Porto. My final project involved the chemical characterization of maize and grass silage samples to identify and quantify polyphenols using high-performance liquid chromatography. In 2018, I earned a Master’s degree in Clinical, Analytical, and Forensic Toxicology at the Faculty of Pharmacy of the University of Porto. My work included a seminar entitled “Forensic methods and tools in the determination of the postmortem interval” and the development of a potentiometric sensor coupled to a chromatographic system for histamine determination in biological samples. In 2019, I joined the FoodPolyphenol-Lab research group, contributing to the project “Research cooperative within the scope of polyphenols and their industrial applications” (0377_IBERPHENOL_6_E), funded by the European Regional Development Fund through the Portugal-Spain cooperation program POCTEP-IBERPHENOL. This work expanded my expertise in polyphenols and their industrial applications.
